A Pie de Tierra was established in 2017 with 20 hectares of vineyards, producing a total of 10,000 bottles of wine. Aitor Paul, a sommelier at Lavinia, and David Villamiel, a winegrower from Méntrida are the two men behind this new winery. They both trained at the Professional School of Viticulture.
A Dos Manos is a single-varietal red wine made from Garnacha, and it has been aged for 12 months in 225-litre French oak barrels. The wine is created organically from grapes harvested from various plots, with vines between 25 and 45 years old.
The grapes were manually harvested and placed in traditional rubber buckets, rather than boxes, to keep them cool in the morning and to avoid the extreme heat of summer.
Vinification was conducted with 60% stemming and 40% destemming, and spontaneous fermentation with indigenous yeasts. Maceration took place for 20 days, and the wine was bottled without filtering or clarification.

- Appearance: A cherry hue with a low layer appearance
- Aromas: An infusion of wild red fruits, liquorice, and lavender.
- Palate: The wine has a fresh and pleasant entrance, fine tannins, and a long finish.
- Serving Temperature: Best served at 16ºC
- Pairing: An excellent complement to roast or grilled lamb, white meats with strong sauces, and powerful, aromatic meat stews of pork, lamb, duck, or pheasant.
