Tinto Do Demo 2020 is a highly esteemed unfiltered red wine that has been aged for 10 months in French oak barrels.
The distinctive grape blend of Caiño Longo (70%), Sousón (20%), and Brancellao (10%) are sourced from the "Eigón" estate in the Beade parish, Avia valley. This estate spans just 1 hectare with predominantly granite sand and silt soil.
The vineyard practices exclude organic herbicides or insecticides, instead favouring phytosanitary products certified for organic agriculture.
The grapes were destemmed, and fermented at 19ºC in stainless steel tanks for 18 days with light daily punch-downs. After separating the gross lees and pressing, the wine was aged in three French oak barrels for a minimum of 10 months, undergoing malolactic fermentation. Tinto Do Demo was then bottled without filtering, clarifying, or correcting.
