Rabia, a wood-aged organic red wine, is crafted by Bodega Cerrón, using the Petit Verdot grape variety, in the D.O. Jumilla.
Rabia hails from a 2.2-hectare vineyard (La Muela) at 900 metres above sea level, boasting 30-year-old vines planted in rocky limestone. Through organic and biodynamic cultivation practices and low yields, the grapes maintain their essential characteristics, resulting in a refined wine with excellent ageing potential.
The grapes are hand-harvested at optimal ripeness. In the winery, most of the Rabia grapes are destemmed, gently crushed, and cold-macerated for five days. Fermentation occurs naturally with indigenous yeasts in open 500-litre barrels with punch-downs, followed by 16 months of ageing in French oak foudres. The wine is then bottled without filtration or fining.
