La Servil by Bodega Cerrón / Stratum Wines is a red wine made primarily from Monastrell grapes, accompanied by Moravia Agria, Blanquilla, and Rojal. This organic wine is produced in limited quantities and boasts a fruity and refreshing taste, with a strong mineral undertone.
The vineyards, La Muela and El Cenajo, sit at an elevation of nearly 1,000 metres above sea level and are approximately 70 years old. El Cenajo, located in Fuente del Álamo, receives a north orientation and has a soil composition of calcareous gravel and sand.
The grapes are harvested by hand and fermented in a wooden vat before aging for 14 months in 5,000 and 8,000 litre foudres.
Here's a taste of what you can expect from this wine:
- Aromas: La Servil has an intense aroma of red fruit paired with aromatic Mediterranean herbs like thyme and rosemary.
- Palate: It is fresh and flavourful, delivering a delightful mineral sensation with a long and persistent finish.
- Serving Temperature: For the best experience, we recommend serving La Servil at 16°C. It can also be stored until 2030 if kept under optimal conditions.
