Los Yesares by Bodega Cerrón / Stratum Wines is a highly exclusive red wine as each vintage is produced in very limited quantities. It is crafted mainly from the Monastrell variety and is renowned for its depth, finesse, and exceptional minerality.
The grapes are sourced from organically and biodynamically farmed vineyards, which were planted over 80 years ago, namely El Casuto del Agrio, Barranco del Pedernal, and Ladera Margosa. These vineyards are situated in the Fuente-Álamo area (Albacete) at an elevation of 920-940 metres. The soil type is mainly degraded limestone rock and seashell sands, with the occasional presence of flint rocks.
The grapes for this wine are handpicked and undergo spontaneous fermentation in 1,000-litre wooden vats. The wine is then aged in used French oak barrels.
