TIEMPOS MODERNOS
Tiempos Modernos by El Lagar de Moha is a young, organic and vegan white wine that has been produced in the Vino de la Tierra de Castilla y León region.
The grapes used are cultivated with ecological agriculture techniques and are audited and certified by the Organic Agriculture Council of Castilla y León. The vines are planted on typical terraces with boulders, which facilitate water drainage and minimize the risk of cryptogamic diseases.
The soil is poor in organic matter with a clay and limestone horizon in the subsoil. The climate of the area is continental with an Atlantic influence. The treatments used on the vines are of natural origins, such as infusions and broths of herbs like horsetail, camomile tea, yarrow, and valerian.
WINE MAKING
- All of the grapes were harvested by hand.
- Fermentation occurred with the natural yeasts present in the skins of the grapes, which are high-quality yeasts that express the unique characteristics of the Godello grape.
- After fermentation, the wine was aged on its fine lees and then clarified with bentonite to stabilize the wine.
- Bottling took place in February.
TASTING NOTES
- Appearance: Tiempos Modernos has a bright straw yellow colour.
- Aromas: It has complex and elegant aromas of white flowers, white fruit, herbaceous and even spicy tones with a mineral background.
- Palate: In the mouth, it has a lot of volume - unctuous and round. The aromas perceived in the nose are accentuated in the retronasal phase and are complex and persistent.
- Pairing: It's an excellent wine to enjoy on its own or paired with lightly spiced white and red meats, grilled or baked fish, seafood, rice dishes, and salads.
SAPIENTIA
Crafted using natural yeasts found in the grape skins, El Lagar de Moha's Sauvignon Blanc is fermented in stainless steel tanks, stabilised with bentonite and cold rested, and filtered using natural cellulose plates.
The vines are cultivated using organic farming techniques, resulting in a wine that is not only delicious but also environmentally friendly.
The grapes are carefully selected from vineyards in Nava del Rey, which are audited and certified by the Castilla y León Organic Farming Council. The vines are planted on the typical terraces with boulders (the so-called "cascajosos" soils) close to the Duero River.
The treatments used on the vines are of natural origin, including infusions and broths of herbs such as horsetail, camomile, yarrow, and valerian. Weed control is carried out with tillage techniques, and no herbicides are used. These techniques help maintain and increase biodiversity in the vineyard, resulting in grapes that genuinely express their unique characteristics.
WINE MAKING
- The grapes are harvested in early September and undergo a short, cold maceration before being pressed.
- Fermentation takes place with natural yeasts present in the skins of the grapes.
- The wine is clarified with bentonite to stabilise it before bottling in February.
TASTING NOTES
- Appearance: Sapientia Sauvignon Blanc has a bright yellow colour with greenish reflections.
- Aromas: It has a high aromatic intensity with notes of cut grass, citrus, and aromatic herbs such as mint, coriander, and fresh basil.
- Palate: This white wine is fresh, full-bodied, and balanced, with aromas of passion fruit in the retronasal phase.
- Serving Temperature & Pairing: This wine is incredibly versatile and can be enjoyed on its own or paired with various dishes such as fish, seafood, pasta, rice dishes, and cold creams. It is also perfect with sushi and should be served between 8-10 ºC.
