Miguel Castro Maillo's Ojo y Coíllo pays homage to traditional Andalusian wines.
The Pedro Ximénez grapes are harvested from old vineyards pruned to Ojo y Coíllo (hence the name) in the Sierra de Montilla region, which is an area of recognised superior quality. The vineyards are located at an altitude of 550 metres with southwest orientation in the Paraje de Riofrío Alto.
This wine was fermented in old Fino barrels and then rested on its lees under a veil of flor. After a few months, the fermentation lees were removed, and the rest continued until the next harvest. Finally, it was racked into a stainless steel tank, where it remained for one month before bottling.
Here's a taste of what you can expect from this wine:
- Appearance: Greenish yellow.
- Aromas: Intense, with hints of yeast, white flowers, citrus fruit and a chalky background.
- Palate: Fresh, balanced, and saline with a bitter, sapid finish.
- Serving Temperature: 7 - 9ºC.
