Miguel Castro Maillo's Ojo y Coíllo Benavente Alto is a taste of the superior quality from Sierra de Montilla.
This wine is the product of a meticulous selection of vineyards in the Vereda del Cerro Macho region, situated in the Benavente Alto area of the historically renowned Sierra de Montilla.
The goblet trained vines are between 40 and 80 years old, and are grown in the albariza soil – a very calcareous, lumpy loam. Despite the region's extremely dry climate, the soil's unique capacity to retain and transfer moisture to the plant has made viticulture possible in the area.
The 2022 vintage, like previous vintages, had an early flowering due to high spring temperatures. The hot and dry summer was typical, but heat waves and droughts are the factors that truly impact the ripening and harvest dates. These conditions caused lower yields and compromised quality, necessitating a thorough selection process to discard the damaged clusters.
This white wine is fermented and aged in old Fino casks separately for each plot, and rests on its lees under a veil of flor. After the fermentation, the wine is left to age until the next harvest, and then blended with the wine from both plots.
