Sebastià Pastor's Encobeït has identity and character. It is the winery's most emblematic product.
Encobeït is a Mallorcan word which means to welcome with love (to give shelter).
This red wine is made with the native Mantonegro grape variety from vines that are over 40 years old. The grapes were harvested by hand, selecting the best bunches in the vineyard itself. Fermentation was carried out at a temperature of 28ºC for 20 days. The wine was then aged in fine-grain French oak barrels for 6 months.
Here's a taste of what you can expect from this wine:
- Appearance: Encobeït is a cherry colour with hints of violet.
- Aromas: The aromas of the Mantonegro varietal predominate; ripe red fruit preserve, floral notes (rose) and hints of toffee.
- Palate: It has a smooth glyceric entry, with ripe tannins. Mineral notes marked by the terroir can also be appreciated. Its long persistence on the palate stands out, reminding us of the primary aromas of candied red fruit.
