Selva Vins is the personal project of veteran Mallorcan winemaker Carlos Rodriguez Furthmann. His small winery is located in the Sierra Norte region of Mallorca. His artisan wines are created using minimum manipulation. He also prioritises the use of indigenous grape varieties.
The GN is a 100% local grape varietal. Selva Vins was the first winery in Mallorca and the Balearic Islands to make this type of wine with spontaneous fermentation and minimal intervention.
Fermentation is spontaneous. Nothing is added apart from a small dose of sulphites, and the wine is not filtered or clarified.

TASTING NOTES
- Palate: This red wine recalls notes of dried tomatoes, carob, dried fig, paprika, black olive, baked pepper, fried fish skin, geranium, beet, fig leaf, dehydrated mushroom (shiitake), black garlic, and pepper. It is intense and long in the mouth.
- Pairing: Pair this wine with dishes that include paprika, pickles, anchovies, dried fish, eel, tomato sauces, dried tomato, black olives, eggplant, baked pepper, grilled sardine, vegetable coca, beetroot, spinach, sobrasada, snails, baked or fried nori seaweed, stuffed tomato, tumbet, pickles, botifarrón, barbecued meats.
