Selva Vins is the personal project of veteran Mallorcan winemaker Carlos Rodriguez Furthmann. His small winery is located in the Sierra Norte region of Mallorca. His artisan wines are created using minimum manipulation and he also prioritises the use of indigenous grape varieties.
The Mallorcan native grape Gorgollassa is used to create this red wine. Part of the wine is aged for a brief period in 500-litre French oak barrels. Another third is aged in a Mallorcan clay amphora and the remaining is aged in stainless steel.
The winemaking process involves spontaneous fermentation. Nothing is added to the wine apart from a low dose of sulphites. The wine is not clarified or filtered.
Selva Vins was the first winery in Mallorca and the Balearic Islands to make a 100% Gorgollassa wine.
Production: 2400 bottles.
TASTING NOTES
- Palate: To taste, this wine recalls strawberry plants, sloes, rose hips, mushrooms, leather, myrtle, juniper, mountain herbs, pink pepper, and violets. This red wine is elegant, long, intense, fresh, and complex.
- Pairing: Pair this wine with pork tenderloin, mushrooms, partridge, quail, lamb, goat, sea bass, baked salmon, skate, meat pie, fideus de vermar, smoked meats, goose, duck, deer, wild boar, and arroz brut. This wine will also pair well with dishes that include red fruit sauces, goat cheese, camembert, and brie.
