Selva Vins is the personal project of veteran Mallorcan winemaker Carlos Rodriguez Furthmann.  His small winery is located in the Sierra Norte region of Mallorca.  His artisan wines are created using minimum manipulation.  He also prioritises the use of indigenous grape varieties.  

 

A native Mallorcan variety, Malvasia, is used to create this Dulce Natural white wine.  The grapes come from a vineyard in Pollensa.

 

The winemaking process involves spontaneous fermentation, with some kept on their fine lees for two months.  Afterwards, it spends three months in a used 400-litre chestnut barrel (from the forests of Montseny, California).  The residual sugar is 15 grs/lt.

 

Nothing is added to the wine apart from a low dose of sulphites.   The wine is not clarified or filtered.

 

Production: 2400 50cl bottles.

 

TASTING NOTES

  • Palate: This wine recalls notes of pastry cream, burnt sugar, brown sugar, caramel, toasted nuts, walnuts, ensaimada, butter, lemon cream, orange peel, charcoal, candied orange, and bitter orange marmalade. This naturally sweet wine is creamy, intense, and long in the mouth.
  • Pairing: This wine pairs well with foie, blue and cream cheeses, flan, pudding, caramelized ham, dried fruits, ensaimada, cottage cheese, fatty fish, banana, baked apple, roasted chestnuts.
