Tisalaya Diego is a signature white wine with a unique character.

 

Crafted by winegrower and winemaker Miguel Morales, Tisalaya is a one-of-a-kind wine made from old vines acquired by his father Pablo Morales. It is a 95% Diego wine with handcrafted production that embodies the volcanic landscape of Lanzarote.

 

The wine is produced in Tinajo, located in the National Park of Timanfaya and the Natural Park of Los Volcanes. The climate is arid, dry, and windy, making it an ideal environment for wine production.

 

The Diego variety is the dominant one (95%), with an age of over 60 years and grows in soils where volcanic rock reigns. The traditional cultivation system in holes, with a planting frame of four by four, preserves the uniqueness of the vineyard. The work on the land is minimal, as it is covered by volcanic ash, which prevents weed growth and makes soil manipulation unnecessary.

 

The grape skins are thick, and the must is viscous, terpenic, and high in acidity, making it difficult to make and with a low yield. However, it has a very original character, which is accentuated by keeping the must on its skins for 16 hours, spontaneous fermentation, and ageing on lees for at least nine months. These processes result in a wine that is well suited to bottle ageing.

 

Here's a taste of what you can expect from this wine:

  • Appearance: A golden wine with green reflections.
  • Aromas: It has notes of ripe fruit, butter, and citrus.
  • Palate: A high but well integrated acidity with flavours of white fruit and custard apple. It is very unctuous and pleasant to taste.
