Veronica Ortega, an Andalusian oenologist, made her mark by becoming the first woman to work at La Romanée Conti. She graduated in oenology from the University of Cádiz, and has since become a key figure in the Bierzo appellation in Castilla y León.
Veronica has produced various wines over the years, and Roto is her latest introduction, which focuses on the Palomino grape. Grown at 750 metres above sea level in the municipality of Cobrana, the Palomino grape thrives in this unique microclimate of the region.
WINE MAKING
Veronica now has a new winery in Carracedelo (originally a warehouse), which she has transformed into her workplace.
Here, the Roto wine underwent fermentation in wooden casks, followed by ageing in sherry casks that were imported from Jerez (and were previously used for the ageing of manzanilla).
Roto then spent about 18 months under velo en flor, until it was bottled.
With a limited production of only 1,800 bottles, Roto 2021 offers a fresh, mineral, and savoury profile.
TASTING NOTES
- Palate: Roto is a white wine that captivates with its delicate and light characteristics. This dry wine exudes personality, and is noted for its freshness and intriguing mineral undertones. Citrus notes blend with a pronounced salinity, complemented by a hint of spice that enhances its savoury essence. The wine concludes with a savoury finish, leaving behind a refreshing, well-defined acidity.
