Verónica Ortega's 2022 Quite is created using grapes from a series of plots in Valtuille de Abajo. They are Mencía vineyards that are approximately 90/100 years old, with sandy-clay soils and pebbles (quartzite, slate...) that are predominant in the Bierzo Valley.
Quite is made with destemmed grapes that are fermented in stainless steel tanks. Light work is carried out during fermentation, to avoid a marked extraction. There is a short maceration period of 5-7 days.
This red wine is aged for about 9 months, 80% in truncated cone-shaped French oak vats of 5,500, 3,500 and 2,500 litres capacity and the rest in 800-litre clay amphorae and barrels.
The idea of this wine is to combine the minerality provided by the sand and clay soils, and the fruitiness of the Mencía, whilst retaining the friendly and cheerful character of this grape variety. This results in a wine that is very fresh, informal, and agile, with lots of fruit.
